Stir fry peppers with paneer in toaster oven

Here is another favorite dish of mine which I make once a week. When you don’t feel like cooking or it is too hot to be near the stove, this one saves you all the discomfort by just chopping the peppers, and onions to add some spices with oil to put it in the toaster oven for 30 minutes. Paneer is an Indian cubed cheese you can get it from Indian grocery store. It comes fresh in a block or cubed in the freezer section. If you don’t want to use paneer, use firm tofu instead. You can add different vegetables like broccoli, cauliflower.

Ingredients:

1 Green bell pepper

1 Yellow pepper

1 Red sweet pepper

1 Red or white onion medium size

3 cloves of garlic cut in pieces

1/2 inch ginger in pieces.

12 cubes of Paneer or firm tofu

2 tbsp oil

2 tbsp lemon pepper spice

1tsp apple cider vinegar

1/1/2 tsp salt or to taste.

Method:

Wash and dry the peppers cut them in square big pieces. Cut onion garlic and ginger in big pieces. Thaw the paneer in the microwave for 1 minute. Take out Pyrex or Corning oval dish, put all the veggies with onion, garlic and ginger.Put oil over the veggies, add salt and lemon pepper seasoning and the apple cider vinegar, mix everything together so that the seasoning and salt is on the veggies. Turn on the oven to 350 degree, slide your oval dish in the oven for 30 minutes. No need to cover with foil. After 30 minutes your stir fry veggies are done to eat with rice, or as a side dish with your dinner.
