Here we go again with string beans, I love string bean as they look and taste so fresh. Mushrooms an easy vegetable- no peeling, cuts in no time & cooks in no time. Beans and mushrooms with some red grape tomatoes- wow! The colors are so vibrant you want to eat and enjoy the color combo. I made it as side dish for my fish in onion gravy with polenta.
Prep time 15 minutes, Serves 2
Mushrooms white – 1/2 pound
Trimmed green beans – 1/2 pound
Grape tomatoes – 10
Salt to taste
Crushed black pepper – 1tsp
Dried fried onions (get it from Indian grocery store) – 1/4 cup
Oil – 1 tbsp
Wash mushrooms, cut in four pieces each set it aside, trim and wash beans if they are big you can cut it in half. Heat oil in pan little smokey put the beans first stir it to cook for 2 minutes then add mushrooms turn heat to medium high as mushrooms leaves water add salt, cook on high heat about 2 minutes, now add the tomatoes stir it nicely so the tomatoes are cooked but not over cooked it should hold the shape.
Add black pepper and turn off heat. To keep onion crunch add them when you are ready to eat.
I served as side dish to my fish with polenta.
