Strawberry Ginger Relish

Spring is in the air in New Jersey with temperatures in 60 to 70 Degree means a lot. With spring comes all the good fruits like strawberrys, blueberrys etc. These days strawberry is seldom sweet or juicy always end up making smoothie or chutney.   For a while wanted to make something different, this time half pint ate with pudding cake, still half left so I got an idea to make strawberry pickle relish with ginger, jalapeño some olive oil, it is so delicious you can eat the whole jar in one sitting. Ginger gives it a very distinct taste and good source of antioxidants. Raw sugar or (shakkar) from Indian grocery store gives a mild sweetness to sourness of strawberrys. Chop the strawberry & ginger with chop wizard gives a different taste and look, same thing cut differently tastes different that is my belief.

 

Prep time 15 minutes  Yield 2 cups

2 cups chopped strawberrys ( chopped with chop wizard)

1/2 cup chopped ginger

2 tbsp olive oil

3 tbsp raw sugar or ( shakkar)

1 tsp black salt ( kala namak) strong taste from normal salt

1 tbsp chopped jalapeño

Wash and chop strawberrys, peel the skin of ginger and chop. Mix strawberry and ginger in bowl and add all the remaining ingredients and stir it nicely, taste it if you need to add more sugar or salt or more jalapeño do that and put in a jar let it sit for 30 minutes for the flavors to mingle. This is good relish for your fish or chicken or just eat with plain rice.
