New year start with some good weather for East coast, then big storm dumping 2 feet of snow in one day. When there is storm in winter means no going out, come up with some new recipie to try as i cook and watch snow falling from my kitchen. I like to make tofu sandwich, stir fry it, one time I made tofu fritters taste like cheese pakora. This is my family’s favorite to make it with lot of onions and good masala taste with fennel seed powder. You need to microwave tofu for 2 minutes to take the raw smell out. Cabbage adds a sweeter taste to it, fennel seed powder enhance the flavor over all. You can make a nice toasted sandwich with this, or can have it over brown rice, quinoa or boiled millet.
Prep time 20 minutes, yield 4 servingse
Organic tofu 2 small pieces or one big one
Big red onion roughly chopped
1 cup finely chopped cabbage
1 tbsp shredded ginger
1/1/2 tsp of fennel seed powder
1 tsp onion black seeds (Nigel seeds)
1 tsp turmeric powder
1 tbsp tomatoe paste
1/2 cummin seeds
Salt to taste
1 tbsp oil
1/2 chopped jalapeño if you want it more spicy
Heat oil in pan add the cummin and onion seeds when it splutter add the onion, saute it for 5 minutes on medium heat till they are opaque color, now add the chilli and ginger let it cook anothe 2 minutes keep the heat on low. Meantime crumble the tofu in a microwaveable bowl microwave it for 2 minutes, take it out to cool. By this time onions are sautéed add the tomatoe paste with some water to make a nice masala. Add cabbage mix it with the masala then add tofu, make the heat medium add salt and fennel seed powder stir it gently break any lumps of tofu, cover it and turn heat to low. Let it cook for 7 minutes on low heat open the lid stir it nicely, now cook on medium heat for another 2 minutes turn off heat and your masala tofu is ready to eat.
