Black bean patti with spinach,ginger and onions

I visited Costa Rica a couple of years ago, ate black bean rice every day either for breakfast or for lunch. I like the taste, bought black bean burger from super market read the ingredients but the list was quite long, so I wanted to make it my self like the potato tiki we make. I tried it and it came out so good that now I have it in my freezer all the time! When I do not have any thing else to eat this comes handy for a good sandwich or a wrap. You can make these with canned beans also, I prefer to make them from scratch. Ginger will take care of the gas part of the beans.

Cook time 1 hour, Yield about 16 patties

1 bag about 2 cups of black beans

2 cups of fresh chopped spinach

1 medium size chopped onion

1 tbsp chopped fresh ginger

Salt to taste

1/4 cup besan (garbanzo flour)

1 tsp of chopped green chilies

2 tbsp oil for frying.

Soak beans over night in 6 cups of water. Next day drain the soaked water and put new fresh water about 3 cups if you are using the pressure cooker, or 4 cups if using the stove top method in which you boil the beans for half hour or so till they are done. For pressure cooker put the beans in close the lid  turn on stove on medium high when pressure cooker starts to hiss clock to cook for 3 minutes and turn off heat. When the steam is off open the lid strain the beans in colander, while beans are still warm to the touch mush them with potato musher. Add chopped spinach, onion and ginger along with the salt and besan mix with your hands. If it is soft to touch you can add more besan, or bread crumbs. Now start making patties. Heat a non stick pan put 2 tbsp oil add the patties let it cook for couple of minutes check the other side it should be brown flip it and brown the other side. Your black bean patties are done! Enjoy as it with chutney or make a nice sandwich with pickled onions. For freezing let it cool completely before freezing them.
