Masala Cauliflower with Peas

This dish is my favorite, as it cooks in no time and delicious. Fall is the best time to make this dish as of the new crop. I use cauliflower to make as stir fry, make stuffed paratha with that for lunch, you can make sweet and sour pickle with that. I will publish the recipie as I make all the above.

Cooking time 30 minutes, Yields 6 to 8 serving

1 big head of cauliflower about 10 to 12″

1 cup frozen peas

2 tbsp grated ginger

1 tsp chopped jalapeño pepper

2 tbsp of tomatoe paste

2 tbsp chopped cilantro leaves

2 tbsp of vegetable oil

Salt to taste

Masala mix:

1 tbsp cumin seeds

1 tsp onion seeds

1 tsp mustard seeds

1 tsp fennel seeds

Wash the cauliflower and dry with paper towel, cut the core to cut cauliflower in half and cut into small pieces about 1″ long and 1/2 ” thick, measure the peas and keep it aside. Heat the pan on medium heat add oil when oil is warm enough add the spice mix, it will splutter at this time add the chopped pepper and grated ginger stir it to add the tomatoe paste. Add little water to the masala mixture to incorporate the masala paste. Now add peas to the masala mix and let it cook for couple of minutes, then add salt and cauliflower mix it well and put the lid on. After 4 minutes take the lid off give it nice stir, cook it on high heat as the cauliflower leaves some water, keep stirring to dry the water over high heat. When it looks dry enough turn off heat and cover it. When ready to eat add chopped cilantro.
