Has any body ever tried to make this veggie? It is a delicacy in Northern India. In winter when cauliflower is in abundance, you make cauliflower with peas in which use the flower part, the core part is left to make this veggie. Whenever I have a party I use at least 3 heads of cauliflower to make the dish, and I am left with the big chunk of cores, to make this delicacy of my childhood. If I have enough for the party I make this core veggie for the party also.
Cook time 30 minutes, Yields 2-3 serving
Cauliflower core about 3
1 whole bulb of garlic roughly chopped
1 dried red chile broken in to pieces
3 Tbsp oil
2 tbsp mango powder (amchur)
1 tbsp fenugreek leaves
Salt to taste
Separate the flower part from core, after separating the core make small pieces wash it and keep it on the strainer. Heat oil in the pan when little smokey add garlic, let the garlic get little brown add turmeric and red broken chillies, cauliflower core called Dunthul, add salt cook it for couple of minutes, lower heat and cover it with lid. Let it cook on low heat for 10 minutes open lid stir it, let it cook covered for another 10 minutes. Now add mango powder and fenugreek leaves. Your Dunthul veggie is ready to eat as is or a side dish for pasta or rice or roti!
