Mango Salad with sprouted fenugreek and blueberries 

Summer is here so are the mangoes! Kent mangoes are my favorite as they do not have fiber and are easy to cut in pieces with out mushing it. This salad is one of my favorites as it is sweet and tangy. I made these sprouts a couple of days ago & wanted to use them for salad to go with my sandwich for lunch. To make sprouts in summer it is so easy, all it takes is to soak the seeds for whole day, drain the water, put it in thin towel tie it tight, let it sit for night and by evening u will have your sprouts. With this salad you have healthy antioxidant dose to purify your blood. Fenugreek is anti inflammatory & is good for arthritis aches and pains. Sprouts are not bitter as compared to its powder form.

Prep time 10 minutes, Yield 2 serving

1 big Kent mango

1/2 cup blueberries

1/4 cup sprouted fenugreek seeds

1/4 cup chopped red bell pepper

2 tbsp chopped mint, basil, lemon balm leaves

Salt to taste

1tsp fresh lemon juice

Mix all the ingredients in a nice bowl add salt and lemon juice mix it nicely. Your salad is ready to eat as side dish with your fish, chicken, or veggie burger.
