It is almost a month since I have not written any recipie! I have been busy getting ready to have my house painted from the inside, it is a lot of work to clear all the walls and to keep everything in good shape. Painters were supposed to come today, but I got a message last night, if they can push it to one more day. So I have the time to think and make an interesting lunch. Looked in to fridge, I have tofu and green and rep bell peppers. In my garden I have basil, mint and lemon balm growing & I wanted to use it on my sandwich today. I always plant onion bulbs in spring time so now I have plenty of green onions to use in all my cooking. The sandwich has come out so good and flavorful.
Cook time 20 minutes, Yields 2 serving
Tofu sliced in half to make 4 thick rectangular pieces
Handful of basil, mint and lemon balm leaves
2 tbsp olive oil
2 tbsp of crushed coriander seeds
Bunch of green scallions chopped roughly
1/2 green bell pepper cut in round shape
1/2 red bell pepper cut in round shape
Multigrain toasted bread
1 tsp oil
1 tbsp of mayonise or any pesto
Arrange sliced tofu on a plate, chop basil, mint and lemon balm, spread it on tofu with some salt, olive oil and black pepper and crushed coriander seeds, spread nicely with your hands so tofu slices are covered with all this. Wait for 10 minutes flip tofu to other side so both the sides have this herbs mix coating. Heat pan with oil and sauté the green onions with bell pepper cook for 2 minutes so the peppers do not lose the crunch. Take off this mixture in a plate, in the same pan slide the tofu slices with herb mix let it cook for a minute then flip to the other side to cook turn off heat. In the meantime toast the bread, take out bread and spread pesto on both slices and then put pepper onion mix , top it with tofu slices cut it diagonally put it on a plate enjoy the sandwich. If you have cast iron pan then results are fantastic.
