Sunday dinner is mostly fish and some vegetables, yesterday we went for hike in the morning with friends and had sandwich for lunch. It was a beautiful hot day most of the evening sat on deck as it is next to my kitchen and our day starts on deck and ends on deck after dinner. I made fish yesterday, looked in the fridge and found only turnips, which my husband does not like. Came up with new trick sliced them with mandolin very thin, sautéed with butter and put the fish on top of the turnips with some green onions. So delicious he could not figure out which vegetable was it! 😉
Prep time 20 minutes. Serves 2
Tilapia fish 2 pieces (used Costco frozen prefer over fresh fish)
2 large size turnips very thinly sliced with mandolin
Fresh lemon to marinate fish
1 tsp black pepper
1 tsp salt
2 tbsp butter
2 tbsp basil pesto(used store bought)
Take fish out of the plastic wrap squeeze lemon on both sides, rub salt and black pepper and keep it aside. Peel turnips with peeler to slice very thin. Heat butter in pan when it melts let it brown a little bit then add turnips without stirring let it cook on one side, when you flip it, it will be little brown then turn the other side, now you place the fish with all its juices on top of the turnip bed and cover it with lid on medium heat let it cook for 10 minutes flip the side of the fish another 5 minutes to cook. Open lid and this time try to put some turnips on cooked fish add green onions close the lid turn off heat. When ready to eat put some turnips on plate then put fish piece and the turnips top it with some basil pesto or whatever you like. Delicious dinner is ready without much hassle
