It is almost a month since I wrote anything on my blog. Middle of April we went to Virginia for my Grandaughter’s 5th birthday princess party, it was lot of fun! Got sick after coming back from there, bad cold took almost 10 days to recover, then we have the heat wave on east coast after a bad winter so it was a gift & I wanted to be outside as much as I can! Since we have nice weather sitting out on deck for a good meal with refreshing salad is a must. This is a very basic and easy salad, do not need any dressing just a squeeze of lemon will do the trick.
Preparation time: 10 minutes
Yield 4 to 6 servings
1/2 head curly cabbage finely chopped
1/2 sweet onion cut in rounds
1/2 seedless cucumber chopped small pieces
1 tomato cut in small pieces
1/2 fresh lemon
1 tsp freshly ground black pepper
1 tbsp olive oil
1/2 inch thinly sliced ginger
Salt to taste
Put everything in bowl mix with hands, squeeze lemon, mix it. Add salt and black pepper and oil again mix all with your hands sprinkle some dried mint leaves in summer if you have fresh put those and you salad is ready to eat. Ginger gives very distinctive taste to this salad.
